Ingredients
- 1 lb ground beef or ground turkey
- 1 tbsp olive oil
- ½ small onion diced
- 2 cloves garlic minced
- 2 cups low-sodium beef broth
- 1 cup diced tomatoes no sugar added
- ½ cup heavy cream
- ½ cup shredded cheddar cheese
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- ½ avocado diced (for topping)
- 1 tbsp fresh cilantro chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until soft.
- Add ground beef and cook until browned, breaking it apart.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Pour in beef broth and diced tomatoes, and bring to a simmer for 10 minutes.
- Reduce heat and stir in heavy cream and shredded cheddar cheese. Simmer for another 5 minutes.
- Serve hot, topped with diced avocado and fresh cilantro.
