Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • ½ small onion diced
  • 2 cloves garlic minced
  • 2 cups low-sodium beef broth
  • 1 cup diced tomatoes no sugar added
  • ½ cup heavy cream
  • ½ cup shredded cheddar cheese
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ avocado diced (for topping)
  • 1 tbsp fresh cilantro chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until soft.
  • Add ground beef and cook until browned, breaking it apart.
  • Stir in chili powder, cumin, paprika, salt, and black pepper.
  • Pour in beef broth and diced tomatoes, and bring to a simmer for 10 minutes.
  • Reduce heat and stir in heavy cream and shredded cheddar cheese. Simmer for another 5 minutes.
  • Serve hot, topped with diced avocado and fresh cilantro.
