Ingredients
  

  • 2 boneless skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 medium zucchini diced
  • 1 tsp Italian seasoning
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes optional
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant.
  • Add diced chicken and cook until lightly browned.
  • Pour in chicken broth and bring to a simmer.
  • Stir in zucchini, Italian seasoning, salt, black pepper, and red pepper flakes. Simmer for 10 minutes.
  • Add fresh spinach and let it wilt for 2-3 minutes.
  • Serve hot, garnished with fresh parsley.
