Ingredients
- 2 boneless skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 4 cups low-sodium chicken broth
- 2 cups fresh spinach
- 1 medium zucchini diced
- 1 tsp Italian seasoning
- ½ tsp sea salt
- ¼ tsp black pepper
- ½ tsp red pepper flakes optional
- 1 tbsp fresh parsley chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until fragrant.
- Add diced chicken and cook until lightly browned.
- Pour in chicken broth and bring to a simmer.
- Stir in zucchini, Italian seasoning, salt, black pepper, and red pepper flakes. Simmer for 10 minutes.
- Add fresh spinach and let it wilt for 2-3 minutes.
- Serve hot, garnished with fresh parsley.
