Ingredients
- 1 medium zucchini sliced into ¼-inch rounds
- ½ cup sugar-free marinara sauce
- ½ cup shredded mozzarella cheese
- ¼ tsp dried oregano
- ¼ tsp garlic powder
- ¼ tsp black pepper
- 6 pepperoni slices cut into quarters (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange zucchini slices on the baking sheet and lightly season with oregano, garlic powder, and black pepper.
- Spoon a small amount of marinara sauce onto each zucchini slice.
- Top with mozzarella cheese and pepperoni pieces (if using).
- Bake for 8-10 minutes, until cheese is melted and bubbly.
