Ingredients
  

  • 1 medium zucchini sliced into ¼-inch rounds
  • ½ cup sugar-free marinara sauce
  • ½ cup shredded mozzarella cheese
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • 6 pepperoni slices cut into quarters (optional)

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Arrange zucchini slices on the baking sheet and lightly season with oregano, garlic powder, and black pepper.
  • Spoon a small amount of marinara sauce onto each zucchini slice.
  • Top with mozzarella cheese and pepperoni pieces (if using).
  • Bake for 8-10 minutes, until cheese is melted and bubbly.
  • Let cool slightly before serving.
