Ingredients
- 1 medium head cauliflower cut into florets
- 2 tbsp unsalted butter
- ¼ cup heavy cream
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 cloves garlic minced
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 tbsp chopped fresh parsley for garnish
Instructions
- Steam or boil cauliflower for 10-12 minutes until tender. Drain well.
- In a saucepan, melt butter and sauté garlic for 1 minute until fragrant.
- Blend cauliflower in a food processor or mash manually.
- Add butter, heavy cream, cheddar, Parmesan, salt, and pepper to the cauliflower and mix until smooth.
- Serve warm, garnished with parsley.
