Cheesy Garlic Cauliflower Mash

Ingredients
  

  • 1 medium head cauliflower cut into florets
  • 2 tbsp unsalted butter
  • ¼ cup heavy cream
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh parsley for garnish

Instructions
 

  • Steam or boil cauliflower for 10-12 minutes until tender. Drain well.
  • In a saucepan, melt butter and sauté garlic for 1 minute until fragrant.
  • Blend cauliflower in a food processor or mash manually.
  • Add butter, heavy cream, cheddar, Parmesan, salt, and pepper to the cauliflower and mix until smooth.
  • Serve warm, garnished with parsley.
