Turkey & Avocado Cloud Bread Sandwich

Ingredients
  

For the Cloud Bread:

  • 3 large eggs separated
  • 2 oz cream cheese softened
  • ¼ tsp cream of tartar
  • ¼ tsp sea salt

For the Sandwich Filling:

  • 6 oz sliced turkey breast
  • ½ avocado sliced
  • 2 large lettuce leaves
  • 2 slices tomato
  • 2 tbsp mayonnaise or Greek yogurt
  • ¼ tsp black pepper

Instructions
 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a bowl, beat egg whites and cream of tartar until stiff peaks form.
  • In another bowl, mix egg yolks with softened cream cheese and salt until smooth.
  • Gently fold egg whites into the yolk mixture, being careful not to deflate.
  • Spoon batter onto the lined baking sheet to form 4 small rounds.
  • Bake for 25 minutes until golden brown, then let cool.
  • Assemble the sandwich by layering turkey, avocado, lettuce, tomato, and mayonnaise between two cloud bread slices.
  • Serve immediately.
