Ingredients
  

  • 2 small boneless skinless chicken breasts
  • 1 tbsp olive oil
  • ½ tsp Italian seasoning
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 2 slices fresh mozzarella cheese
  • 2 slices tomato
  • 4 fresh basil leaves
  • 2 slices low-carb bread
  • 1 tbsp balsamic glaze sugar-free

Instructions
 

  • Preheat grill to medium heat.
  • Rub chicken breasts with olive oil, Italian seasoning, salt, and black pepper.
  • Grill chicken for 6-7 minutes per side until cooked through.
  • During the last minute, place mozzarella slices on top of chicken and allow to melt slightly.
  • Toast the low-carb bread in a pan or toaster.
  • Assemble the sandwich by placing grilled chicken, tomato slices, basil leaves, and balsamic glaze between two slices of bread.
  • Serve warm and enjoy.
