Ingredients
  

  • 4 cups baby spinach
  • 1 cup fresh strawberries sliced
  • ¼ cup sliced almonds
  • ¼ cup crumbled feta cheese
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • ½ tsp erythritol or monk fruit sweetener
  • ¼ tsp black pepper
  • ¼ tsp sea salt

Instructions
 

  • In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, sweetener, salt, and black pepper.
  • In a large salad bowl, combine spinach, strawberries, almonds, and feta.
  • Drizzle dressing over the salad and toss to combine.
  • Serve immediately.
