Ingredients
- 1 15-oz can chickpeas, drained and rinsed
- 1 cup cucumber diced
- ½ cup cherry tomatoes halved
- ¼ cup red onion finely chopped
- ¼ cup crumbled feta cheese
- 2 tbsp fresh parsley chopped
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp red wine vinegar
- ½ tsp garlic powder
- ¼ tsp sea salt
- ¼ tsp black pepper
Instructions
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic powder, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Cover and chill in the refrigerator for 30 minutes before serving.
