Ingredients
- 2 cups riced cauliflower
- 2 boneless skinless chicken breasts, diced
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ½ cup heavy cream
- 2 tbsp unsalted butter
- 2 cloves garlic minced
- ½ tsp onion powder
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley chopped
Instructions
- In a large skillet, melt butter over medium heat. Add diced chicken and cook for 6-7 minutes, until golden brown.
- Add minced garlic, smoked paprika, onion powder, salt, and black pepper, stirring well.
- Stir in riced cauliflower and cook for another 5 minutes until tender.
- Pour in heavy cream and bring to a gentle simmer.
- Add shredded cheddar and Parmesan, stirring until the cheese is fully melted.
- Remove from heat, sprinkle with fresh parsley, and serve warm.
