Ingredients
- 4 4-oz salmon fillets
- 1 lb fresh asparagus trimmed
- 2 tbsp olive oil
- 3 tbsp unsalted butter melted
- 3 cloves garlic minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp sea salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp red pepper flakes optional
- 2 tbsp fresh parsley chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the asparagus: Toss asparagus with 1 tbsp olive oil, ¼ tsp salt, and ¼ tsp black pepper. Spread on one side of the baking sheet.
- Prepare the salmon: In a small bowl, mix melted butter, garlic, lemon juice, lemon zest, paprika, and red pepper flakes.
- Place salmon fillets on the other side of the baking sheet. Brush the garlic butter mixture over the salmon.
- Drizzle remaining olive oil over everything and sprinkle with the remaining salt and pepper.
- Bake for 12-15 minutes or until salmon flakes easily with a fork and asparagus is tender.
- Garnish with parsley and serve warm.
