Creamy Tuscan Chicken with Spinach & Sun-Dried Tomatoes

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes optional

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken with salt, black pepper, and Italian seasoning. Sear chicken for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
  • In the same skillet, melt butter and sauté garlic and sun-dried tomatoes for 1-2 minutes.
  • Add heavy cream and Parmesan, stirring continuously until smooth. Simmer for 2 minutes.
  • Stir in spinach and cook until wilted.
  • Return chicken to the skillet and coat with the sauce. Simmer for another 5 minutes until chicken is cooked through.
  • Serve warm and garnish with extra Parmesan if desired.
