Ingredients
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic minced
- ½ cup sun-dried tomatoes chopped
- 1 cup fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp sea salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes optional
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, black pepper, and Italian seasoning. Sear chicken for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté garlic and sun-dried tomatoes for 1-2 minutes.
- Add heavy cream and Parmesan, stirring continuously until smooth. Simmer for 2 minutes.
- Stir in spinach and cook until wilted.
- Return chicken to the skillet and coat with the sauce. Simmer for another 5 minutes until chicken is cooked through.
- Serve warm and garnish with extra Parmesan if desired.
