Cauliflower & Cheese-Stuffed Bell Peppers

Ingredients
  

  • 4 large bell peppers any color, halved and deseeded
  • 2 cups cauliflower rice
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup cream cheese softened
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
  • Brush bell peppers with olive oil and place them cut-side up in the baking dish.
  • In a mixing bowl, combine cauliflower rice, mozzarella, cheddar, cream cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  • Fill each bell pepper half with the cauliflower mixture, pressing down slightly.
  • Bake for 20-25 minutes until the peppers are tender and the cheese is melted and bubbly.
  • Garnish with parsley and serve warm.
