Ingredients
- 4 large bell peppers any color, halved and deseeded
- 2 cups cauliflower rice
- ½ cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ cup cream cheese softened
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley chopped
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
- Brush bell peppers with olive oil and place them cut-side up in the baking dish.
- In a mixing bowl, combine cauliflower rice, mozzarella, cheddar, cream cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
- Fill each bell pepper half with the cauliflower mixture, pressing down slightly.
- Bake for 20-25 minutes until the peppers are tender and the cheese is melted and bubbly.
- Garnish with parsley and serve warm.
