Ingredients
  

  • 1 cup unsweetened shredded coconut
  • ¼ cup almond flour
  • 2 tbsp coconut oil melted
  • 2 tbsp erythritol or monk fruit sweetener
  • ½ tsp vanilla extract
  • ¼ tsp sea salt
  • 2 tbsp unsweetened almond milk
  • 2 tbsp sugar-free dark chocolate melted (optional, for drizzle)

Instructions
 

  • In a bowl, mix shredded coconut, almond flour, melted coconut oil, sweetener, vanilla extract, and sea salt.
  • Stir in almond milk until the mixture holds together.
  • Using a small cookie scoop or spoon, form the mixture into small macaroons.
  • Place on a parchment-lined tray and refrigerate for 1 hour.
  • If using chocolate drizzle, melt the sugar-free dark chocolate and drizzle over the macaroons before serving.
