Ingredients
- 4 oz cream cheese softened
- 2 tbsp unsweetened Greek yogurt
- 2 tbsp erythritol or monk fruit sweetener
- ½ tsp vanilla extract
- ¼ cup finely diced fresh strawberries
- ¼ cup almond flour for crust
- 1 tbsp melted butter for crust
Instructions
- In a bowl, mix almond flour and melted butter. Press into small silicone molds or a mini muffin tin to form the crust.
- In another bowl, beat cream cheese, Greek yogurt, sweetener, and vanilla extract until smooth.
- Fold in diced strawberries and mix gently.
- Spoon the cheesecake mixture over the almond crust in each mold.
- Refrigerate for at least 2 hours before serving.
