Ingredients
  

  • 4 oz cream cheese softened
  • 2 tbsp unsweetened Greek yogurt
  • 2 tbsp erythritol or monk fruit sweetener
  • ½ tsp vanilla extract
  • ¼ cup finely diced fresh strawberries
  • ¼ cup almond flour for crust
  • 1 tbsp melted butter for crust

Instructions
 

  • In a bowl, mix almond flour and melted butter. Press into small silicone molds or a mini muffin tin to form the crust.
  • In another bowl, beat cream cheese, Greek yogurt, sweetener, and vanilla extract until smooth.
  • Fold in diced strawberries and mix gently.
  • Spoon the cheesecake mixture over the almond crust in each mold.
  • Refrigerate for at least 2 hours before serving.
