Ingredients
  

  • 6 large eggs
  • ½ cup fresh spinach chopped
  • ½ cup mushrooms finely diced
  • ¼ cup shredded cheddar cheese
  • ¼ cup feta cheese crumbled
  • ¼ cup unsweetened almond milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ½ tsp olive oil for greasing muffin tin

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a muffin tin with olive oil.
  • In a mixing bowl, whisk together eggs and almond milk.
  • Stir in spinach, mushrooms, cheddar cheese, feta cheese, garlic powder, onion powder, salt, and pepper.
  • Pour the mixture evenly into the muffin tin, filling each cup about ¾ full.
  • Bake for 18-20 minutes, or until the egg muffins are set and lightly golden.
  • Let cool slightly before removing from the tin. Serve warm or store in the fridge for a quick grab-and-go breakfast.
