Ingredients
- 12 large shrimp peeled and deveined
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp black pepper
- ¼ tsp sea salt
- 1 medium cucumber sliced into 12 rounds
- ¼ cup Greek yogurt
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- ½ tsp Dijon mustard
- 1 tbsp fresh dill chopped
- ½ small avocado mashed
- ¼ tsp red pepper flakes optional
Instructions
- Heat olive oil in a skillet over medium heat.
- Toss shrimp with smoked paprika, garlic powder, black pepper, and salt.
- Sauté shrimp for 2-3 minutes per side until pink and opaque. Remove from heat and let cool.
- In a small bowl, mix Greek yogurt, lemon zest, lemon juice, Dijon mustard, dill, and mashed avocado.
- Arrange cucumber slices on a serving platter.
- Top each slice with a dollop of the yogurt mixture.
- Place one shrimp on top of each cucumber slice.
- Garnish with red pepper flakes (if using) and extra dill.
- Chill for 10 minutes before serving.
