Zesty Shrimp Cucumber Bites

Ingredients
  

  • 12 large shrimp peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp sea salt
  • 1 medium cucumber sliced into 12 rounds
  • ¼ cup Greek yogurt
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • ½ tsp Dijon mustard
  • 1 tbsp fresh dill chopped
  • ½ small avocado mashed
  • ¼ tsp red pepper flakes optional

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Toss shrimp with smoked paprika, garlic powder, black pepper, and salt.
  • Sauté shrimp for 2-3 minutes per side until pink and opaque. Remove from heat and let cool.
  • In a small bowl, mix Greek yogurt, lemon zest, lemon juice, Dijon mustard, dill, and mashed avocado.
  • Arrange cucumber slices on a serving platter.
  • Top each slice with a dollop of the yogurt mixture.
  • Place one shrimp on top of each cucumber slice.
  • Garnish with red pepper flakes (if using) and extra dill.
  • Chill for 10 minutes before serving.
